I'm not running redhat myself but a quick google search gave that there is a
red hat package located at:
ftp://updates.redhat.com/7.3/en/os/i386/sane-backends-1.0.7-6.1.i386.rpm
That is problary more suited for you to install than downloading a .tar.gz
file and compiling it yourself.

Start with installing the package above. Or a newer if you find that
somewhere.
Since it is packaged by Red Hat it should have directory structures that work
well with other software in the distro.
I guess you still can have problems with that documentation differs from your
system. But since all executables problary are in your path and finding other
files just is a case of "find / -name plustek.conf" that shouldn't be a big
problem. Even if the directory holding a file differs between distros i guess
the file names should be the same.
What are your problems? Tell us and hopefully even I can help. Just don't ask
me about how to calibrate where scanning starts (see my previous post). I'm
waiting for an answer to that if anyone have one.
