unless you specifically disable it, it should be there. To be sure, you can do
this:

./configure --enable-gui

There's a chance that the gui is running, but your main window is hidden on
another X desktop. You could try deleting ~/.gpsim and starting again. In fact,
the ~/.gpsim file is only created if the gui is running. So if you delete it,
run gpsim, and see that it reappeats - then the gui is linked in and
running. I'm not sure which window manager you're running, but you ought to be
able to get a list of all of the windows that are open.
