These modes go through the simulation without making any updates to anything
visible. It sounds to me like you're confusing the program being
unresponsive with a crash. Under the two "without gui" options, the
simulation will run silently until either it hits a breakpoint or you hit
<CTRL-C>. Under realtime with gui, you can also click the "stop" button.
The first <CTRL-C> does not kill the program and is required by design.

These simulation modes are very useful if your application does intense
processing or long delays. If you want to break after 10 seconds (realtime)
of execution, and you don't need to watch what's happening in the meantime,
these no-update options will crank through the simulation for you.
